Description
Pasilla means "little raisin" in Spanish, referring to the dark brown colour and raisin-like aroma of the dried chili pepper. With its rich, smoky and mildly hot flavour the dried pepper is often used in Mexican mole sauces. The green peppers are also used in dishes and then called Chilaca. The chili peppers mature from a dark green colour to dark brown and almost black when ripe and can grow longer than 20 cm.
